I have a vertical propane smoker i seasoned it now i am looking to smoke for the first time what meat should i use? 
 
Chicken leg quarters are about as easy as it gets.

They are also cheap.

We like to coat them with oil & dust with Montreal chicken seasoning.

If you run your smoker at 325, the skin will be at least bite through & maybe a little crispy.

Smoke them to an IT of 175 & let them rest on the counter for 15 minutes.

Or you can smoke them at 225 & pull them out around 165 & finish them up on a hot grill to get crispy skin.

Thanks for the info I was thinking chicken so if things did not go right it would not cost that much to disguard
 
I personally, Us,  I should say, really like heavy Old Bay on chicken, everybody taste different.

It has, I taste, just a TOUCH of Chinese Five Spice taste. 

And like Al says, try to smoke at 325 + for the better skin.

Al has WAY more experience

I do like Montreal on beef and beef burgers often though.   Marc
