Eastern North Carolina (well east of I95) is noted for some of the best smoked breakfast sausage. One type in particular is often referred to as Coon Dog Sausage, a cured and dry smoked link sausage.

Does anyone have an authentic recipe for Coon Dog Sausage?
 
Is this what you are looking for? It's a post from 2015 and they used AC Legg #25 spice as the base. The original poster did not use cure, but I would suggest adding it for safety.

I also found an article where Chef Vivian Howard talked about making "Tom Thumb Sausage" which was also a semi-dried to dried sausage made with Cure #2. Article included the recipe and a ton of info. Recipe is about 2/3 of the way down the page in the article.
