Well, getting this back on track (apologies for the earlier derailment Richie) I decided heck with it, I'm gonna make a nice dinner for Tracy and I. A couple of friends have been invited but have not heard back from them yet. I've got a small 7 1/2 pound prime rib cut from the first of the 103 sub primal rib sections which I plan to do on the rotisserie of the Santa Maria. It's defrosting now. Tracy is devout Catholic and loves Easter, although it's never been a family thing with us scattered all over the country, but she's more than deserving of a top notch meal. Being that I get to go to work on Monday, we are giving consideration to having our Easter Sunday meal tomorrow so that time is available to relax and enjoy it. Hell with this pandemic....full grill ahead!! Not gonna let it stop us from having a good meal, we are just not gonna have tons of friends for this one...only two if they can make it. Typically I'd invite 6 or 8 people for a prime rib meal but this time around it's probably not a good idea.
