Easter plans. What's yours?

First off Happy Easter to all.

Normally we have a big family group for all the holidays , but this time it will be just us here in the house ( the 3 ladies and I ).

I have been working at the property for the last 4 days this week and I have to drive back and forth as we are not set up with the running water as of yet. Maybe by next week, fingers crossed.

Calling for wind rain and finally warm today , we will see about that.

So that means they are letting me relax , and I only have to cook for the 4 of us, lol

Pork steak and Gravied Mashed Potatoes etc.

Smoked couple Carver hams and couple rotisserie chickens.
Oddly went cajun on one and basically SPG on other. Cajun one got coated with Tone's, Slap Ya Mama hot and some Jah Love jerk seasoning from Oakridge. Which should make it spicy hot. Got mixed up on my hold and nobody could pick out the spicy one. LoL

Just the two of us here this year, but no reason not to smoke an 11 lb ham! Dijon slather, Killer Hog BBQ rub, and in the last 90 minutes glazed twice with a brown sugar/honey/apple juice/bourbon concoction. It’s ready to come off the smoker as soon as the potatoes au gratin and asparagus is ready!
 
Been busy visiting friends in Arizona. Got a fresh picnic ham for $1.49, Latino market in Florida. Made injection water, onion, chicken bouillon, worcheshire, brown sugar, garlic, cinnamon, cloves, orange zest, Orange Jack Daniel's. Rub brown sugar, salt, cloves cinnamon, pepper. Inject and rub into ziplock overnight in refer.

Smoke at 275F until IT 165F. Sliced and served. Everyone enjoyed.

I worked Sat night, so I went to church this morning then went home, did a few things and went to bed and slept until 10:30 pm. I have a half rack of ribs on the smoker now to be served with a basket of fries.

I'm curious about what ya'll doing for Easter? Since me and Ann are now empty nesters. We're very unconventional when it comes to holiday meals when we're by ourselves. We were actually the same often when we had kids in the house. One year we had a pizza party!
This year. We are doing a ham. Picked out a Wegmans signature glazed bone in spiral cut ham.
Now, I'm deciding how to cook it. My cabinet electric smoker got damaged when the shed roof collapsed.
So, that leaves the pellet smoker. Or oven, or crock pot method. Weather is supposed to be good. I'm betting the smoker will be the go to.
Nothing beats a good spiral ham for Easter. The pizza party year sounds like a fun memory, though!
