So, I get my first offset smoker (Horizon 20 RD Marshall) last weekend and my wife says "lets have brisket for Easter".  Nothing like jumping into the deep end!

Started with a 14# packer and I added a 7# pork sholder to the mix.  Had to have some intermediate time in the oven while at Sunrise Services, but mostly done with Pecan, Hickory, and a bit of Oak.

Well, here is Easter Dinner.

Wow! Looks great!  How were the two?  To your satisfaction?  Make notes in your smoke log on what to try next time, etc.
 
Everything came out well.  My satisfaction was the silence at the table while everyone was eating.  Sent some home with folks and heard about it today as well.  So... guess it turned out ok.  ;)

Had two issues that need to be worked on.  I did everything with the installed gages and a cheap "instant" read thermo.  I know one of my two were off as there was a 10 degree differnce between the two temps. 

The 2nd was the wood.  Since I have only had the smoker for a week, I was using up some hickory chunks, the pecan was from a friend who cuts some of his own furniture lumber, and the oak was some that I had around for the firepit/camping.  Since everything was different, I think the temperature control left alot to be desired.  No doubt it was a learning experinace.
