Yes, you can do them the night before.
I had the same question when I had a lot of stuff to do, searched alllll over and could not find an answer so I prepped them the night before anyway.
They came out perfectly delicious.
I ended up making them fresh.
Next time I think I will do them ahead of time. The less I have to worry about when smoking, the better!

I'm going to do the same thing in the morning...brisket for slicing, a butt for pulling and smoked beans...will serve it at a safety meeting for work...I'm working that day so I can't serve it fresh out of the smoker. Reheating works fine as long as the reheat gets up over 140* in a reasonable time. Just keep it well chilled, and for not too long and you'll come out smellin' like roses...and smoke!!!!!!!
I've done it myself, 66. Just make sure that you seal the pan well so they don't absorb any oders from the fridge. I cover the foil pan with plastic wrap and then aluminum foil. Letting the beans sit over night will allow the flavors to blend together before adding them to the smoke.
