1 lb bag green split peas
2 qts water
1 can chicken broth (16oz) Regular NOT low sodium
2 8oz 1/2" thick ham steaks I use Smithfield
1 large onion, peeled, sliced in half
1 large carrot or a couple smaller ones chopped
1/2 C chopped celery
1 tsp garlic powder
1/2 tsp cumin
1/2 tsp oregano
1 tsp salt
1/2 tsp black pepper
1 bay leaf
Hickory, apple or cherry -Whatever your preference - I use hickory

Rinse and strain peas for their baptism in cold water about 2 hrs.
Fire smoker -prepare coals for about a 4hr stint.
Once smoker is tuned 200-225* or so, pat ham steaks dry and give them and the onion an excorcism with smoke until peas are done soaking. After taking ham off, throttle smoker up to about 300* and check smoking wood/replenish.
Cube smoked ham and onion to size of your liking, eat some ham.
Drain peas, add all ingredients to 5qt dutch oven except salt and pepper.
Put dutch oven in smoker uncovered (duh!) and smoke/simmer for about 2 hrs stirring occasionally to distribute smoke in potion, add broth or water if needed.
Add salt and pepper 15 mins before done.

Double, double toil and trouble;
Fire burn and caldron bubble.

I just double-smoked a ham this past weekend. The wife was going to use the bone for pea-soup. Unfortunately we had strong winds with gusts of up to 70mph. and it knocked down a lot of trees and power lines. Long story short all the fridge items are thrown out for safety reasons so no pea-soup or ham salad. Bummer. Your recipe sounds good and includes few more ingredients then ours. I may have to make some adjustments next time.

Thanks Chris,it's pretty Hammy! You can use 1 ham steak to make it like regular pea soup though.I always make grilled cheese sammies with it and cut them into little triangles for dipping.
