I wish my sister could find my moms recipes. My mom was Mexican and we still have family in Brownsville, TX. One day I will post the enchilada sauce recipe with peanut butter in it....Yup

Anyways

I think this is close to hers.

After the dutch in the oven for 3 hours I will post the rest.

…. oh my wife puts peanut butter in her enchilada sauce to….. a nut based paste is very common in a mole sauce

Ok here is your gravy carnitas. Add chipotle to your taste, I added 2.

Looking good! I bet th enchilada sauce is good. I put some peanut butter in many of my red Chile sauces.
 
Looks good to me, but over rice and beans with some sliced peppers and grilled onions
