Drying sausage to smoke

Can you use a clean cloth towel to dry sausage before smoking instead of drying with smoker @ 120* vent opened door ajar ?

you really want air movement around the sausage to dry it, Even hanging them in your house somewhere with a fan on it works.

I hang mine in the house under a ceiling fan . You're drying and equalizing temps . Cold sausage in a warm smoker will sweat .

Before adding smoke to any product, it's best to have it's temperature above ambient so condensate will not form... meat, cheese... same difference..
