Found some nice looking ribs today that were dry-aged for 21 days. I've never cooked dry-aged meat and don't want to mess it up.

Do you do anything special for dry-aged beef or just smoke 'em like normal?

Yes sir, like normal. Waiting for the money shot. You will be forever ruined! Lol
Beef flavor is so much better dry aged.
 
I love aged beef either dry or wet.
Wife does NOT. Any guess what we eat for dinner?
I save the aged for a "me" meal
 
Thanks folks! Tax appointment today with the CPA so I won't be able to smoke these until tomorrow after church.
 
They came out pretty good!
