My son watched BBQ Pitmasters with me last night and fell in love with the lollipops made with the chicken legs. Planning this for a smoke this weekend. Was planning on doing a brine and wondered if anyone had any experience with this? Wondering if it would matter to push the skin up the bone and remove gristle before or after the brine? And I will wrap the exposed bone in foil before the smoker!
 
I watched that too. It was Diva Q that did it and forgot to put foil on the bone. So, it was turkey drumstick and she took a cleaver and knocked off the small end. This in effect cut loose the tendon at the open joint (not thigh end). She sure is a foul mouth gal.

After watching that particular show. I am going to butterfly my 19lb turkey. This will be my first smoked turkey and this show (episode) was very helpful to what I am going to do this weekend. Thinking of injecting some form of fluid to help keep it moist and to slow the breast so that the breast and thighs get done at the same time.
