I am making some summer sausage and this time i am trying dried japs instead of fresh. How would I convert the amount. I used 10% of fresh 1 lb per 10 of meat. Any ideas?
 
Never tried dry, cause I like the crunch of the fresh. But I am interested in the outcome to see which you like best.

Personally me, I'd say eyeballing it would probably be your best route... even tho they're dried, they should still have the amount of heat as normal... just my .02
 
I dry a lot of jalapenos from the garden. I'd say the peppers shrink up to about 1/3 of size, so going on volume I'd cut your measurement is 1/3 of fresh. That should get you in the ballpark.
