The wife requested some simple down home chicken....

Started off with a tray of drums and wings :-)

Just light salt and Big Bald BBQ Rub

Ok maxing out the grill space! Did this cook at 350 on the Memphis pellet....hungry so no time to wait!

They are going to paired with some roasted sweet spuds.

After 38 - 40 min the drums were at a IT of 165 so they went under the convection broiler 500 for 4 min to crisp the skin and take them to IT 175

The wings were at IT 165 so they only went under the broiler for 2 min to a finish temp of 170

The sweet spuds convection roasted at 425 for 30 min after being forked

Some sweet white Idaho corn in salted water for 8 mins

This is just a crazy easy meal to prep & cook but makes for a happy family!!!

Ps everyone went back for seconds!

As an FYI, I call it the 70 min meal, I turn on the grill & oven, then season the chicken, after a 20 min warm up the chicken goes on, then the spuds go in & I start a water pan for corn. When the chicken is ready to broil the spuds are pulled and the corn is dropped and drums go under the broiler, 4 min then Wings, 2 min later we pull plates and sit down to watch an episode of forged in fire!

A good way to end the weekend!

Just remember they are in the garage fridge is you stop by, no room in the house fridge!

My wife makes me keep the beer in our garage fridge.

I have thighs defrosting right now, mom requested them for my niece and her birthday dinner which is the on the 4th.
You gave me a great idea with the sweet potatoes. I was just going to do corn and a green garden salad but I like the sweet potato idea, yum!!! I plan on covering the chicken with butter milk with a little garlic salt in it the night before, then rinsing it off before I apply the rub. I might add grilled watermelon salad instead of green salad, I'm not sure yet.

Your meal looks great, I hope mine turns out as well as yours did.:emoji_thumbsup::emoji_thumbsup::emoji_thumbsup:

Just love chicken thighs! I like to de-bone & de-vein them and it turns them in to meat biscuits! Sweet potatoes with a little butter, cinnamon, and sugar makes them just YUM! Your 4th meal sounds like a great plan! A nice cool salad on a hot day is always nice.

Thanks, the rub has a fair amount of sugar in it so it creates a nice yummy crispy crust quickly that seems to keep the moisture in.

I picked up a pack of drums and the yams today will most likely toss them on the smoker on the 3rd and reheat on the 4th.
I grabbed way more chicken then we could eat, so I plan on pulling the leftovers for pulled chicken sandwiches.:emoji_thumbsup:
 
That is a "no leftovers" meal...Like!

I agree with broiling them in the oven for a couple of minutes to make the skin perfect.
