I wanted to use the sausage in a stuffing for some canadian bacon, so I cut the recipe in half....Wish I would have made the full batch!
I used a mixture of pork and boneless dove breast.
Combined the seasonings with the beer...
Mixed the sausage and chilled overnight....
I stuffed the loin and had enough leftover to make a small log of sausage...
The dove sausage was fantastic... I will definately be making this again.
