Doing the roll call thing...

Just joined and just vacuum packed my first smoke. It was salmon. Will post in fish forum on that. 

Always grilled and bought a small smoke box for my grill but it didn't seem to come out that great. So I bought a Master Built Upright Propane Smoker. Probably the size of MES30 I think. Truth is I bought a cheapo smoke box for my grill that I knew I wouldn't like just so I could have a reason to buy a smoker. Why? I don't know... since I don't have a wife to answer to. Guess I just needed to talk myself into it.

So I'm sitting here typing with my kitchen table covered in Cabelas adds with two racks on it that used to hold salmon. Adds are soaked with Pam that I sprayed on the grills before I put the fish on. I'm sure my table is well oiled by now. Oh well, my son and I never eat on it anyway. We are coffee table eaters. The TV is closer! 

I always try to cook different things and my son is the guinea pig. Some he likes and some are so-so. Problem is I can't seem to go back to a recipe that he liked because I always think it could be better. So I change it or never make it again. It annoys him that everything I make I say it is ok but could be better. I think he would be happy if I stuck with a few recipes and called it good! But I just can't do that.

And that is why I signed up for this forum. So many different ideas on here it is crazy. I have already spent hours on here lurking. Bookmarking recipes and ideas. And laughing a lot along the way. And that's important to me... to have fun for craps sake. Some of the smoking forums I have read are so serious and lack any sense of humor it's a turnoff. (No I refuse to name them, I actually got good recipes from them) But this one seems to be different.

Anyway, so that is why I joined and a little about me. Now off to make my first "official" post. Lets hope I don't screw up and crash the server.
 
Well it hasn't crashed yet but I do see sparks coming out of it so Slow down!!! But really,
