Well, as you can see from the name, I am in Katy, TX. Just west of Houston and the largest waterfowl migration area in the country. However, duck and goose are a little dry so I'll take any suggestions.

I have a medium size custom made smoker. I would say I am in between novice and expert. I have a couple of shoe leather briskets, but most of what I smoke is pretty good.

Looking to learn from others...
 
get right in here and mingle with a fine crowd! They are all pretty friendly. Don't be afraid to ask questions. If you have some time to read/surf, just use the search mode and you may find answers to your questions sooner, and with added benifits of learning other stuff.
