Hi and Merry Christmas, I had this same issue this past summer, weird wind that night. Brisket seemed dry on the flat, so I spritzed pretty heavy with apple cider and cider vinegar, wrapped and placed in a warm cooler. When I got to the competition, sliced and put a bit more of our bbq sauce than usual. It placed, but really showed that all briskets are different as is every smoke. I use a smoke vault.
