Welcome back I’ve used a lot of your recipes and enjoy your old videos very informative!Many of you won't know me. I was active on the forums for a long time. Then my wife passed away after a long illness. I tried to get back in the saddle and get on with my life but it just didn't seem to happen until I met Sandy. We are engaged and life looks brighter. However, there are always challenges. In June I had a medical emergency and almost left this mortal shell behind. I am feeling better and I am starting to smoke again as Sandy seems to like my humble efforts.

I had the coppa in the seasoned dry cure for 18 days. Then I tied it and put on a rub to smoke it in. I put it in the fridge overnight to form pellicle.

I smoked in the Bradley for 5 hours at 200 F but only had the smoke on for 2 1/2 hours with a combination of maple, mesquite, and hickory pucks.

I too have been absent for a number of years. Ended up retiring (actually job was cut during Covid in 2020) and after a few years of just getting old and dealing with that, I had not been doing much smoking, stick making, or anything. I've gotten back into it this year, so I'm starting to read the forums again too...

My wife passed in 2021 after being together for 42 years. I literally ended up in the nut house for a while, and it took me 2 years to recover.
I met a gal (now love of my life) and we just got married in June! Were planning a big wedding reception in 2 weeks... we got married out of town in a very small ceremony.
I'm going to smoke a big bunch of pork butts for the reception, and it should be a wonderful time, we're really excited, and excited about life again!
