Ok, having some family over tomorrow. Going to do live fire cook on Tri-Tip and chicken

Grabbed 3 racks of St. Louis ribs to try with a direct cook. Never cooked ribs like this, never even had them cooked like this.

So any tips for those that do them like that?
 
There have been a few posts recently doing ribs hot n fast with the vortex on a kettle. If you’re going straight over the fire I’d probably just go salt and pepper, most rubs will just burn.
