I LOVE smoked Dino Bones

Coated with Olive oil, and a liberal coating of steak seasoning

About 3 hours at 225°

Pitmaster Pellets for smoke

Absolutely Awesome!!

looks amazing...thats what im making tonight for dinner...ever since i bought that tube smoker, my wife is a rib convert! sad im running kinda low on pellets tho...damn you pitmasters choice!!! haha

Looks fantastic! Beef ribs, I take it? I have to ask, because around here, no one sells beef ribs with any meat left on the bones.

Safeway sells the "Kalbi" style beef ribs, the ones sliced crossways already. It is actually one of the few places I can find them up here on the north side. One of my favorite apps to make actually, do them Asian style with ginger and Yoshida's hot and fast on the grill to medium rare. They have decent meat on them, so my guess is you could ask the butcher if he has any that are not sliced up yet.

BTW, those look awesome Todd. I need to give those a shot one of these days.
 
The 'dino bones' come from the arm shoulder chuck; the ribs on the arm shoulder roast, removed as a single piece, usually 4 of them.

Cross rib shoulder roast with ribs:


Ribs removed and separated:


Same as 1st Qview, but with ribs on bottom, showing natural seam where they can be removed;


This is where the 'dino bones' come from.  However, 'short ribs' come from several places on the forequarter.
