Martin, (diggingdogfarm) posted this recipe years ago and it's been on my to do list up till this past weekend. I made a 5 lb batch and wish I had made more. These are down right some of the best fresh sausages I've made, and I’ve made my share of sausage.

Looks like a great recipe. I will have to try it. Are they lamb or sheep casings.?

Thanks Dan.... I'm gonna add Mace... I hear it adds a great zip to the flavor.. And I'm gonna try adding some fish sauce.. Probably do several 1# batches to test the flavors....

LIKE Stop criticizing, those look perfect Dan!

I have been studying various brats recipes and one thing that I think many overlook is the use of white pepper. Very different than black and has quite a zip. Also, Marianski's recipe uses quite a lot (3%). Totally agree on adding some umami and plan to use accent/msg in mine. Gonna do a few 1lb tests myself and grill them as brat burgers. All this being said, I am aiming more toward german brats rather than WI style.

using mace is a great idea! MAce and Nutmeg come from the same plant. mace is much better choice for sausage making. Not so "in your face" like nutmeg can be sometimes. IMHO!

That's some of the best looking linked sausage I've seen . Nice work .
I like the ginger in the recipe . I think it really adds something to sausage .
That hot dog looks awesome as well .
