Thank you! I tried a bit different recipe this time as it can be a bit dry if one is not careful. I discovered I was out of elbow macaroni, so I used Penne instead. Not my first choice for mac and cheese, but it worked.

Thank you! I was quite surprised myself when I sliced it! It may not add any flavor, but it is very satisfying when one gets a good smoke ring for the eye appeal. Even though I have a pellet grill, I still prefer my stick burners
 
Radio, where did you get that rack that fits perfectly in the aluminum pan, I have scoured the internet and cant seem to find anything. I think this is a great idea to help catch the juices while cooking.

Actually it didn't fit until I persuaded it with a pair or pliers:D it was too wide, so I bent the edges upward to fit in the pan. As a bonus, it cradles the meat really well. I can measure it when I get home if you would like

How high does it sit off the pan? Everyone I saw wasn’t only an inch which didn’t seem that high.
