dehydrator for summer sausage

i am making summer sausage next week and using lem mix. i dont want to start my smoker as my neuropathy is acting up. so i will add some smoke liquid and instead of oven i was gonna use my dehydrator as it has air flow and thought that would be good. not?? it has a 167degree setting.
 
Yeah. I tried drying some sticks post cooking and they almost immediately started to sweat oil. I think it’s too warm.

what temp did you start?? i thought start like a smoker 120 n increase. ovens works as ive done that before, just thought this way i could increase gradually.
 
Mine is an American Harvest(?). Two settings. On-Off. On was too hot. Off, well . . .
