Afternoon guys,

A local butcher has briskets for sale and they average 14lbs. My problem is I cant store a whole 14lber in my freezer. Ideally I would like to cut it up into half or into thirds and vac seal them. IF the butcher wont cut it up for me, what are some ways for me to chop this up into sizes I can store in my freezer. Or would it be okay for it to thaw, cut up, and re freeze?

See if you can buy just the "point end", I buy them whenever I can find em..
You get all the point and almost no flat.

don't see why the butcher wouldn't do it but if they won't maybe a
A clean (sterile) hacksaw, comes to mind.
what gecko said, if not I would go ahead and thaw it enough to get a knive through it then refreeze.

Butcher Bandsaws have no issue cutting frozen meat and I would think he/she would be happy to cut to order. My choice would be cross cut where the point starts in to two pieces...JJ

I just cut the end off a frozen packer with a meat cleaver & a big rubber hammer.
Going to cut another piece off this weekend.
Do it outside & leave the brisket in the cryovac.
Or it can get messy!!!

Guys thank you for all the responses! I am learning everyday and take all of the info in.
I went into to get the brisket today and they were sold out so that was a bummer.
