Is there such thing as curing too long??
ie: curing a ham, is it possible to over (wet) cure?
 
If you are using Cure #1, you can cure up to 30 days in the brine. Cure #2 is for past 30 days and up to 2 years, as it has nitrates as well as nitrites, which, over time, break down to nitrites,
