So I got bored today, no football to watch.... so I decided to fire up the smoker and smoke a rack of pork ribs. These ribs were ment to be smoked next weekend but today I realized I had
more to smoke next weekend than I could accommodate. Anyways here is a pic of them in the smoker. Using the same basic cure I always use but will use a different finishing sauce.

It is really a very simple recipe.

Salt,brown sugar, granulated garlic, black pepper, paprika, red chile powder, and curing salt.
I rub the mixture into the ribs vacumme seal them then let them rest for one to two weeks.
Then smoke them for 3 to 4 hours. Still working on a BBQ/finishing sauce that I like but that is
an ongoing process that will continue forever:)

Sounds good . I've done them with tender quick . Just wondering your method . Thanks
 
Nice, I do them with Tenderquick overnight then smoke 120 slowly to 155 for 8 - 10 hours and use them for seasoning like ham hock (less fat ) or cook with sauerkraut and potatoes . Just like when I grew up.
