Cure time - Umai Bresaola

Just put 2 eye roasts in the refrigerator. Used the recipe that came with the Umai kit.
Says cure for 2 weeks.

The Umai Bresaola video says 1 week.

What do you recommend?

One weighed 2.25 pounds, the other 2.65.

I have no issues going 2 weeks or longer, just wondering why the difference in cure time.

The weight of the meat in the video was 2.25 pounds also

It is curing, it isn't in the umai bad drying.

once it is, I'll shoot for a 30 - 40 % weight loss.
 
Bresaola cures in a separate container or bag. The UMAi bag is for the drying process.
 
Went with 2 weeks. still dont know the reason for the difference in recommended cure time.

Any, will rinse, put in Umai bags, weigh and wait for the appropriate weight loss.
