Cucumber Potato Salad

I don't know where this recipe originated, but we really like it as a change from traditional potato salads. A friend of ours shared this recipe with us and I'd like to share it here. It seems like an odd combination but it is actually pretty good.

Cucumber Potato Salad

6-8 medium sized potatoes boiled, peeled and cubed

2 cucumbers peeled and sliced

1 medium onion sliced or chopped

1 cup mayonnaise

1 8 oz container sour cream

salt and pepper to taste

This looks like a good way to use up some of my 200 lb cucumber surplus (I exaggerate only slightly).  Maybe some fresh fennel leaf or some dill?
