I feel I'm doing something wrong here...But let me say I'm not stating my finished product taste bad. I just want to hear opinions.
So the main things I want opinions on is this:
I smoke my meat in an offset until roughly 180 degrees internal then wrap it and finish in the oven.
The meat comes out massively moist. There is no dryness at all to it.
Is this method OK or am I causing something or missing something else?

- I smoke my meat on the rack but under it I have a drip tray with about 3 cups of Apple juice.
- I spritz the meat every 30 minutes with Apple juice.
- At 180 degrees internal I remove the butt and place it in the drip tray with the 3 cups of Apple juice then wrap it.
