Critique my only method I've used for Boston butt smoking

I feel I'm doing something wrong here...But let me say I'm not stating my finished product taste bad. I just want to hear opinions.

So the main things I want opinions on is this:

  1. I smoke my meat on the rack but under it I have a drip tray with about 3 cups of Apple juice.
  2. I spritz the meat every 30 minutes with Apple juice.
  3. At 180 degrees internal I remove the butt and place it in the drip tray with the 3 cups of Apple juice then wrap it.

I smoke my meat in an offset until roughly 180 degrees internal then wrap it and finish in the oven.

The meat comes out massively moist. There is no dryness at all to it.

Is this method OK or am I causing something or missing something else?
 
Not a competition expert here, but if its coming out OK, seems like its working for you.

You got a lot of answers on your spritzing thread so I wont address that. The only thing that strikes me different is using the water pan with apple juice then putting the butt in that, foil wrapped over the whole thing. I dont know the size of your pan but if you can handle it without spilling the juice, you do you! Seems like a lot of fluid for the pan and wrapping but I dont know if its still 3 cups plus drippings or if a lot of the cider has evaporated by then in your case.

I've always felt doing stuff like that was waste of apple cider...when smoking a butt at least.

I use water in the pan, which evaporates some and the butt juices flavor that with the rub sweating along with it. Then sploosh some of that in a deeper foil pan (my water pan is shallow), place the butt in there at the stall and wrap the butt and the pan edge with foil. Then unwrap towards the end pull time, put the butt directly back on the rack and let the exterior dry back out a little before pulling it from the heat.

My finishing sauce with ACV in it is all the apple I need to taste in the PP.

This is something I've never thought of!!!!!!!! Oh man have you ever just given me an idea.
