I smoked a Texas style brisket a couple days ago and as usual, had lots of it left over. I usually vac seal and freeze it for meals later, but with the chilly weather, I was ready for some soup or stew.
I prefer to cube the beef, toss in seasoned flour, then brown really well in a skillet, but decided to chunk up the smoked brisket and add to the pot along with the vegetables and see what happened.
I added some Tones beef base to the pot to amp up the beefy flavor and thickened it with a flour/ water slurry. Some of the brisket flaked off the chunks and as a result was all through the stew which made it decadently beefy!
I made a pan of homemade biscuits to go with it and overstuffed myself as it was incredible! Different than my normal stew, but just as good in a different sort way.
