Thanks oddegan. I feel blessed to live here in south Louisiana. They don't call it sportsman's paradise for nothing. I'll post the dishes we cook with the crawfish meat. I have 5.5# set aside for crawfish boudin, and I know we will be doing a bisque and a crawfish stew.
