Today I cold-smoked some salmon for 3 hours before grilling it. I've been keeping track of how many hours smoke has been coming out of the stack. I started with my new smoker early Jan and I'm happy to report that I now have smoked over 100 hours.

Thanks to all the experts who helped me get my start. My chest freezer is more than a 3rd full of smoked foods, its hard to eat as fast as the 'smoking urge' comes.

Good job Tim, I know the feeling. I have over 1500 pics in my album since May 2008. No idea how many hours that took.

I'm a numbers guy, it just something fun to keep track of.

This coming weekend I'll have my first smoke hosting for a largish number of guests.

Tim, 100 hours in about 11 weeks; that's about 9 hours of smoke each week - so on average, you're smoking twice a week for 4.5 hours each. Now, if you loaded up your smoker like you show it in your forum signature, you'd have ~286 ATBs, 44 chickens, 44 pork butts, and somewhere between 30 and 50 slabs of ribs.

How big did you say your freezer was?

I've had a couple long burns with big butts; sometimes the butt was in by itself for a few hours. Several were 6 hour burns with ribs as the main feature and some side items.

I wouldn't be surprised if 200 abt's have come and gone

they are my favorite

Lowest use is when I've done some cold smoking. I only do a couple pounds of cheese or a couple filets of salmon.

Freezer is a nice big chest frezer, plenty of room for leftovers. Once I get some room in there I think I'll probably buy a case of butts from sams, price is good if you buy a whole case.
