I'm always excited when the green beans start coming on. I can buy them so cheaply at the Mennonite stand that I don't grow them anymore. I paid $5 for a nice half bushel. I hate snapping them ask much as I love eating them. After what seemed like forever getting them ready into the 17" Lodge they go along with a few cups of double strength Minors chicken broth. I made up about 8 cups total as they will be cooked down repeatedly.

While those started to simmer it was time for the bacon and onions. One pound of bacon and about 1 1/2 candy onions.

Once the bacon was done and clean onions were tender into the beans they go.

Mixed in and cooked down repeatedly adding broth as needed for about an hour. I also added a good big pinch or two of coarse pepper and maybe 2t salt

I cook until I think the amount of liquid left is good for serving. Here they are off the stove and into storage.

I know this is a simple dish but it's one of my favs and one my food posse goes bananas for. Thanks for looking.

Heck of a good looking side dish Jeff - Bravo. We grew them for a couple of years, but like the snap peas. Very few of them made it into the house. Even Skidmark liked them raw.

Point for sure

Those look great, Jeff and that's how we like them. After shelling butter beans and blackeyed peas, snapping green beans was also something I hated doing...

Nice cook Jeff, Bacon and onion just to let them know you are cooking but magic happens when you cook green beans in with it. Excellent.

Looks delicious! This is very close to the beans are family has been making for years.

Really like this time of year, fresh veggies. I like all type of green beans. These look great remind me of the ones you get with the blue plate special at a local diner. Points for sure!!
