My local Costco had $10 off of whole pork belly's so I picked up three of them. How long will they stay good when they are cryo-vac sealed? I've read the briskets can be aged 30 plus days when refrigerated. Is the same true for the pork belly's?

Pork won't be the same as beef in my experience . I track a lot of this stuff , mostly for pricing .
A common time frame I see on pork from a pack date to a sell by date is about 20 days for pork .
Some beef will be up to 40 days .
" Sell by " is not a freshness date , but used by stores for restocking , so you can get a few days past that , but not always . I personally don't go past with pork . I just bought some pork cushion that was at the sell by date , and it needed to be dealt with .

So if the pack date is on the bellies figure around 20 days stored at 38 degrees or below .

I agree with rich, wouldn't go past the date to much if any with pork. You can freeze it if the dates are close to expire date.
^^^^^This^^^^^ is exactly what I would do. Use it or freeze it. Then don’t thaw it until you are ready to use, don’t thaw it and leave it in the fridge a week, use it right away.

Beef can go past 60 days in vacuum pack. Idk why Costco has 1 week sell by. The butchers tell you they can go 90 days tho
