Remember reading that an alternate method of smoking was to smoke already cooked food.....this was done of course by cold smoking....I'm talking meat.....has anyone done or practices this ???

You mean like cooking a steak and then cold smoking?
I have cold smoked lots of meats then grilled or smoked at a high (regular) smoke temp but never once they were finished.
 
Think that is what it must have been.....cold smoking 1st and the regular cooking till done...!!! Think I'm gonna look it up...think now I might know where I read it...!!! Thanks

When you cook ,wether bbq grill boil or bake you are sealing the outer surface of the food (by cooking).
With the outer surface sealed i don't think it will absorb much smoke.
