Looks great been 20 years since I cooked hens.
Just a note...Between the high smoker temp and the size of the birds, Stuffing is safe.
Stuffed larger birds, especially smoking them low and slow can be dangerous...JJ

Great looking hens Al! My lady will only eat white meat on a chicken, but eats everything on a cornish hen!

Those look great Al - coincidentally I just found the hens at the local Grocery outlet. None of my regular haunts carry the birds. Naturally I purchased a couple for about $2.50 each, and they are in the freezer as I await the perfect time to make them. I think I'll try your method.

Been studying them at the store, lately. Gonna grab a few next trip.
 
I've only eaten game hens once--about 15 years ago. Haven't bithered since. Just too small. They must be a lot bigger now. I think I'll try a couple in the near future.
My MES won't crisp the skin but Miss Linda and I don't eat the skin anywsy.
POINT for the idea.

Those look superb. They are also great injected with la hotsahot and rubbed and deep fried

Very nice meal... Like!

I've never done them in the smoker, just on the grill or in the oven.
Been a few years since I've cooked them as they cost more than regular chickens.
I used to oven roast stuffed with a mix of cooked wild rice, butter, celery, onion, walnuts, garlic and herbs.

would you ya believe that they're simply immature broiler chickens?
I've never looked them up till now, but yeah, they're regular chickens.
I guess it's like eating veal.

If you want something different of an exotic chicken, try a Capon. This is a castrated rooster that makes them fat and juicy! Snatch 'em up in the store if you can find them!
