Corned Beef Question

I bought a 3 pound corned beef at the local chain grocery to make pastrami. Does it have to be soaked in water first, or can I put my rub on it and smoke it? Thanks.
 
I answered in your other thread.

Yes you need to soak it, if you are going to smoke it.

4-6 hours, changing the water a couple of times.

The reason being that they expect you to cook it in liquid which would take the excess salt out.

If you smoke it without soaking it first, all that salt will still be in the meat.

Good to know I always soak mine overnight but have never changed the water thanks for the info !
 
I made Pastrami not long ago and I didn't change water, but I rinsed the heck out of it before and after. Turned out alright...
