Cooking a shoulder without foil

  1. Hey guys, I'm planning on doing a 4 pound shoulder on the WSM tomorrow and I'm just wondering how long it should take, at 275 without foil. It usually takes 6 hours when I foil at 160. Asking this because I'm making supper and want to figure out how much time to allot for cooking.

    I did two 7 pounders the other weekend and it took me around 11 hours at 275 without wrapping.  I'd figure 8 to 10...

    At 275 that "should" take 6 hours or so but at 275 without foil you can still get stuck in the stall so you need to figure extra time.
