Smoking a 10 pounder not too big. Trimmed and rubbed it down with spog and lawreys my smoker runs a little hot bc I dont use charcoal any tips on tending the fire for low and slow. I Want to cook at 225. With a clean smoke. Mop or not mop. I have some ajuis packets should I use them. I pretty much cooking at 250a t this point.
