I've been looking at the convection plates Horizon Smokershas

for sale for my smoker. They are 1/4" steel, My question for

you experts is;

Would Stainless Steel work just as good for the convection plate?

I have access to a piece of stainless that I could get cut to fit?
 
I don't see why not and it would long outlast your smoker.  Are you looking to make tuning plates?  Or are you converting the smoker to a reverse flow?

Stainless will conduct the heat and will also clean up better due to corrosion resistance.
 
I'm going to try to make the one for my smoker, but not to sell or anything like that.
