Controlling temp on Dyna Glo LP smoker

I have a Dyna-Glo 36" vertical LP smoker. My problem is figuring how to control the temperature. With the burner on low, the top chimney fully open and the bottom vents each open about 1/2"", the temp climbs to over 275. My only alternative is to turn the burner off for about 20 mins until the temp is down to 200 then turn back on low for another 30 mins. I have to keep repeating this throughout the smoking time.

This is very good info, I'm converting the same smoker to NG. I was planning on using a 48 drill to match the 15,000 btu rating. Instead of plugging holes it might be best to use a 52 drill for 10,000 btu and see where that gets me. If this becomes problematic I'll use the 48 drill and install a NG pressure regulator. Thinking ahead I've replaced all the iron bolts holding the burner box in place with stainless steel hardware.

Never used that model but did use the MB gasser. It liked to settle in around 275 so didn't fight it and let it run there.
225 is over rated IMO.
Maybe someone else can help with the Dyna-Glo.
