Alright,

I would like to buy a traditional offset smojer because they look like fun..

1) offset smokers burn wood or charcoal both? Burn a combination of the two? Can you use just charcoal?

2) since I'm in Canada I'm assuming a thicker grade steel would be better... what smoker would you recommend... I like entertaining ... somthig like the horizon 24 is perfect I think....

Any other thoughts or suggestions?

Offsets are fun. Plan on spending a lot of time with it! :)

I burned only wood in mine. Never attempted to use charcoal. I had a 24x48 offset. I would imagine it would consume a lot of charcoal.

I used an offset Brinkmann Smoke n Pit Pro for years. Wood and lump charcoal. Never a problem. As I got older I got tired of feeding it fuel and went electric. The Horizon and Oklahoma Joe smokers, while not your top of the line pits will serve you well for many years. Lang and Yoder will be more expensive but will also be of a much thicker grade steel. And a lot heavier. It all comes down to budget.

I'd go with an MES 40 if I were you. Big, well insulated, predictable and great results. Wood chips or some people use an A-MAZE-N pellet tray in the MES.

If your intent on buying an offset I would save up your money & buy a good one.
My Lang cost $1250, but the killer is the shipping, it was $400 & I'm only one state away from Lang.
I don't know what it would cost to ship it to Canada.
Do you have any pit builders up there?
