Well i have an addiction to the chili cheese dogs I make, so I pulled out some of the Hot dogs I made from a pork loin and brisket trim. Made some Cincinnati hot dog chili out of some venison bacon burger, and capped it off with a fresh batch of Cuban bread that I made. The diff between French, brioche and Cuban bread is lard instead of oil, butter and eggs. I topped it off with some of the Carolina gold bbq sauce some pickled onions and pickles I made. Just unreal. A heavenly mess! If anyone wants any of the recipes I will be happy to share them.

Chili
4.25 (1 liter) cups water
  • 6oz (170g) can tomato paste
  • 1/4 cup (32g) chili powder
  • 1 tsp (4g) cinnamon
  • 1 tbsp (12g) garlic powder
  • 1.5 tsp (5g) cumin
  • 1/4 tsp (1g) ground allspice
  • 1/4 tsp (1g) ground nutmeg
  • 1/2 tsp (3g) red pepper flakes
  • Salt and pepper to taste
  • 1/2 tsp (3g) sugar
  • 1 tbsp (14g) red wine vinegar
  • 1.5 lbs (680g) ground beef
  • 1 sweet onion, grated

By Cincy chili you talkin Skyline haha? Only thing I’d change about those pics is the cheese I’d shrewd a little more fine. That’s just how I like it though. It’s all mouth watering!

Just looked at Skyline and the recipe I use is pretty close. I agree on the cheese that was all I had in the fridge. Love that fine shredded on the chili dogs.

I wasn’t saying you copied it. I’m originally from Toledo and just know Cincy is known for skyline or the other way around. I’ve bought the canned stuff before ever actually had the real Skyline. Gonna have to give your recipe a go I love chili dogs.

If its too spicy I Just add more meat. I usually do 800-900 grams of meat and 2 or 3 onions. Incredible as a bowl of chili with some sour cream and shredded cheddar in it.
 
A good chili cheese dog is to die for and yours looks great Dan. But I gotta ask, where did the dog end up?
