College football is upon us once again....tailgating and neighborhood parties. And then throw in the long holiday weekend...

What's on your menu for the upcoming weekend?
 
We'll be camping and elk archery hunting, so it's campfire food! Besides the smoker is dead temporarily (I hope).


Sounds like fun. I am trying to get the wife to let me buy a bow.

I am going to a friends house for a season opening party for The "U". Thinking about bringing some PP to the party.

how do you think you guys will do this year? I'm making some pp to watch the fsu game.
 
I'm thinkin I may try a brisket flat this weekend along with some ABT's and maybe make a leap and do a fattie. I may chicken out on that and just do some smoked burgers. Although I was perusing the Beef forums and saw some tasty reverse seared Ribeye's that looked awesome.

I'll probably be in some kind of food coma long before the weekend is over.

To be honest. I just hope they keep it close. We will have a new QB, I just hope he is smarter with the ball. The old one was hit or miss, if he got hit it was a lot of miss.

I root for all of the Florida Teams, unless it is against Miami.

I am really hoping the Williams brothers do well for FSU. I work with their mom.

they both will play a lot. Karlos is one of the starting kick returners. I'm just glad for football again.
 
Cooking 3 butts , 2 briskets, 25 pounds of wings, 150 ABT's and for snacks 50 pounds of Cajun boiled peanuts. Will also have tater salad,baked beans, and my cole slaw for sides. And of course plenty of cold beverages. Just hope the dang rain gets out of here by Friday so I can start cooking. ROLL Dam TIDE!

I am soooo happy college football is here. Not a huge fan of Pro, but I do watch it.

If Vincent back stays healthy he has a good chance of NFL. Karlos was fun to watch in High School, I am really looking forward to seeing him play. Miami was recruiting him hard, but never had a chance. Mom is a huge FSU fan, even before her boys went there.

Good question Rook! Just confirme with my wife.....pulled pork will be the meal of choice for the weekend. Gunna smoke the heck out of it. Probably add some fresh corn as well but we're mainly making the PP for leftovers.

Well, I have a brisket to smoke, gotta pick up a couple of pork butts, the cold smoker is ready to roll, so cheese, get the bellies started to cure.  Not sure what else I may find when I go shopping Friday.  Oh, yeah a comere to replace the one on strike.  Good smokin' to all!  Steve
 
My wife just advised that ABT's will certainly be on the menu.

I'd rather leave the bison cooking to the Mountaineers!

No q-view of the beginning but I'm experimenting a bit....

Made the ABT's normally and then I grabbed a couple of baking potatoes....washed them, rubbed some kosher salt on them and then wrapped them with 2 pieces of bacon. 

Smoked it all up with some Kingsford Blue and hickory, put the potatoes basically over direct heat and rolled them around to make sure everything got cooked. About 1:45 later, piercing them was super easy so off they come with the ABT's.

Wife loves them! We don't eat white potatoes very often but that may change now! Nice and smoky inside and the skin is to die for....smoky bacon flavored. Awesome!

Just threw on some ribeyes to try a reverse sear and see how that goes.

I'll try to post up some pics later.

Did the ribeyes....kinda over did it actually. 

They were much too done and probably a little too smoky. I had a temp probe in them and was expecting to get a medium rare-ish steak when I pulled them off at 122 and wrapped them to rest but I ended up with something more on the medium side. Still tender but overcooked in my opinion.

Not sure I'll do them this way again, at least not until I get a better handle on the Aussie for doing indirect stuff.

I'm full as a tick regardless so it's been a great day!
