Hi Everyone, curious if anyone has run into collagen casings having an odor. Have 25 lbs of Owens BBQ meat stick material mixed up in fridge ready to be stuffed. However, when I went to cut the casings there is an odor that I have not run into before. I never found them to have a smell - are they safe to use? It was a new sealed package of them. Thanks in advance for any feedback.

Some collagen can have a slight odor.
They are made from beef/pork hide.

Take one of the casings and a paper towel. Rub the casing on the towel to see if you have a slight oily mark. This means the casings are still good and will have the odor.

I agree with BGKYSmoker BGKYSmoker .

But:

I have run into this as well (but the odor wasn't slight) so I called the manufacturer and double checked with them. In my case, they sent me a new batch. Just saying. Can't be too careful.

John

I will give that a try. thank you

Any chance the smell went away after a while out of the package?
no it did not , i had enough other casings to do the batch of meat sticks. I did do two 40'' length's to try them. will be smoking them tomorrow.
