Cold Smoked Chex

Making a batch today to send to my daughter in Calif. Close to 18 years now US ARMY. Time flies.

Pics posted later.

Recipe for oven and smoker.

This recipe is based on the original Chex mix recipe from a 1950’s cereal box that I modified to get a boost in flavor. I will note which things are from the original and which I have added or doubled.

Ingredients:
1 Cup Butter or Margarine (half for original) Margarine is supposed to be original but I like the butter
4 Tbsp w/heavy splash between of Worcestershire Sauce (half for original)
2 ½ tsp Seasoned Salt, I used Lawry’s (half for original)
½ tsp Garlic Salt (half for original)
3 Cups Wheat Chex Cereal (original)
3 Cups Rice Chex Cereal (original 2 Cups)
2 Cups Multi-Grain Cheerios (my addition, the Cheerios really grab the flavors) or 3 Cups Corn Chex (my addition)
3 Cups Peanuts (half for original)
3 Cups small Pretzel Rods (half for original)
1 Cup Pecan halves (my addition from my Aunt’s recipe)

NOTE: If your using the bagged already seasoned chex mix you may want to adjust the season salt, garlic salt. I do add extra rice chex and cherios to the bagged mix.

Preparation:

Preheat oven to 275 degrees F, Melt butter in microwave or small pan. Stir in Worcestershire sauce, seasoned salt, and garlic salt and mix well. Put cereal’s, nuts, and pretzel rods in a large mixing bowl then pour butter mixture over and stir or mix with hands until all pieces are coated with butter mixture.

Place on a shallow baking pan with sides and bake for 40 minutes stirring every 10 minutes. I use foil in my baking pan so that I can pick up the foil and either bag the Chex Mix or move it to a cheese cloth covered smoker rack to smoke. Cool, if not smoking bag and enjoy,  Smoke with your favorite wood (hickory, pecan and apple work well) for up to 3 hours, cool and bag.

You can eat as soon as it’s done but like cheese it gets better after 1-2 weeks in a Ziploc bag.

Wow this sounds great, I eat Chex mix literally everyday. I love the bold mix the best, the only addition I would add is Rye chips.

Looking forward to the pics, thanks for the recipe!

Jeeze, you could put the first 4 ingredients on cardboard, and I'd probably eat it...LOL!!! Add it to the goods you listed, and toss it all through some cold smoke to top it off? Yeah, that's gonna be good snackin' for your daughter...she'll have to hide it if she doesn't want it go missing...of course not knowing her, she'd probably kick all of our a$$es for trying to nab some from her...


Hmm...have you come up with any containers that won't leech smoke aroma which gives away a hint to the possible contents? I know plastic bags aren't up to the task...glass canning jars work, but are heavy and tend to break if not protected from rough handling during shipping/handling. Oh, I think I got it...Mylar bags. You could even add oxygen and moisture scavengers so it stays fresh. Anyway, just thinking out loud...you probably have this covered already as it's not your first rodeo...carry on.

True, very true...but I don't think he wants to pay for the extra shipping charges for the container weight. I think UPS and FedEx cut their max weights per package (too many lifting-related back injuries, or whatever) so he'd be paying freight truck rates, for sure...
...and freight can't ride in the shot-gunner's seat...

I just double zip lock baggy it and usps it to her. Once she gets it dont last long. When my sons were in Iraq & Afgn i would ship 5 lbs each to them, they said it lasted for bout 20 mins. Shipped 80 lbs of jerky to one, he told me the jerky didnt make it through the day. The soldiers were so happy to eat home made goodies.

....it's official, now I've seen it all being done on a smoker.

I thought guys were joking when I first saw posts about smoking salt.

Don't stop until you're smoking non-edible items. Looks great!
