Cokantrice rediscovered... or not...

So, I was watching Food: Fact or Fiction tonight and discovered the Middle Age delicacy of Cockentrice, which is the head of a pig sewn on top the body of a bird, and cooked..."creating a new animal!"

"The recipes from the Harleian & Douce Manuscripts are nearly identical to each other: both describe creating the animal in the same fashion, by cutting the capon & pig in half then sewing the two together; both have a stuffing made of bread, eggs, sheep suet, and spices; both are gilded with egg yolks, saffron, ginger, & parsley juice."

Sorry Kris but I think I'll have to pass on this one. I just can't picture a pug head gracing my dining room table making it past Miss Linda. Heck, she once told me that if I ever decided to mount an animal head on the wall (on the wall, mind you) it would be my head that went up. So I'm thinking one on the table is just a non-starter.

BTW, the tongue on that little piggy...I will fight for it. It's a delicacy.
