I'm smoking some more butts today for my grandson grad party later this month.  Decided to work a couple side experiments while smokes rolling.   This one's pretty simple but crazy delicious.  Marinated boneless skinless thighs in coconut milk and Walkerswoods jerk wet rub.  Roughly 2 cans full fat unsweetened coconut milk and half a jar of the jerk rub.  I let it marinade for 24 hours.  Into the smoker running 275F with B&B competition charcoal logs and cherry wood chunks.  Pretty delicious! Nice fiery bite with a hint of coconut.  The marinade really sticks well to the thighs to form a glaze when cooked.  I'll do these again for sure. Project two is a little more involved but similar.
