Coconut Jerk Chicken Thighs

I'm smoking some more butts today for my grandson grad party later this month. Decided to work a couple side experiments while smokes rolling. This one's pretty simple but crazy delicious. Marinated boneless skinless thighs in coconut milk and Walkerswoods jerk wet rub. Roughly 2 cans full fat unsweetened coconut milk and half a jar of the jerk rub. I let it marinade for 24 hours. Into the smoker running 275F with B&B competition charcoal logs and cherry wood chunks. Pretty delicious! Nice fiery bite with a hint of coconut. The marinade really sticks well to the thighs to form a glaze when cooked. I'll do these again for sure. Project two is a little more involved but similar. Maybe post it up tomorrow.

Looks and sounds great Jeff.
I tried some jerk shrimp for the first time a couple of weeks ago and loved it.
Used the Grace brand from Publix.
Gotta try the added coconut milk now!

Grace and Walkerwoods are legit! I've used it often but never with the coconut milk. I have a case of Coconut milk I got a deal on so gave it a shot.

Please do. Next time I'm going to boil down the marinade for a dipping sauce. Had to many things going today

Never mixed coconut milk with jerk paste. A great way to reduce the salt or the heat when using Walkerswood or Grace's from the jars. Also the added sugars.

That looks fantastic! I love that Walkerswood. Grilled up some boneless thighs with the mild Walkerswood just last weekend and even the mild has a pretty significant kick to it. Good stuff.

Same here, usually I dilute it with olive oil and maybe a little vinegar. Im sure I'll still do that but this makes a great flavor twist.

I've never heard or used the walkerswood jerk seasoning. Is it the marinade you used (it is wet)?
The Walkerwoods is a wet coarse paste. Most big box grocery stores carry it or the Grace brand. Both are legit. You can rub it directly on meat or dilute. When rubbed directly it's too hot for many folks ( you can get a milder version though) I diluted this in canned full fat coconut milk.

I got some pork steaks jerked and ready to cook. Excited. Last time I ran jerk pork I was kinda shocked how much the jerk gave it a beef steak like flavor so I am running with it. Best part is we're talking $1.69/lb!
