Decided to experiment with some cocoa powder in my rib rub. Wanted to share with you all. The powder doesn't do much as far as flavor profile goes however does give a nice color

I'm wondering if a little more cocoa would jump up that flavor profile?

How much cocoa did you put in the rub?

I'm betting a cocoa based rub would really go well on a chuckie or brisket!  Make some chocolate gravy to go along with it!!

I've used chocolate in different forms in savory dishes.

Not necessarily to get the basic taste of chocolate?  But rather to add layers of flavor in a dish.

Think chocolate in a Mexican Mole sauce?  Even chili, if the purists can handle that.

Not terribly different from adding brown sugar or a little molasses, but a slightly different flavor profile.
